Ikawa Distillery: Elevating Japanese Whisky to New Heights
Since November 2020, Ikawa Distillery has been crafting whisky at an impressive 1,200 metres above sea level, deep within the Ikawa Forest. With a focus on harnessing the pure natural environment of the Southern Alps, they produce a whisky that is as distinctive as the land it comes from.
The distillery emphasises three essential elements: the unique “aging environment” provided by the Southern Alps, the pristine “Japanese spring water” naturally filtered through the forest’s untouched soil, and the use of local Mizunara oak for barrel ageing. These key factors come together to create a whisky that fully embraces the richness of its surroundings.
