Kanosuke is one of Japan’s most dynamic young distilleries, and their story is as much about heritage as it is about innovation. Alongside their seaside site in Fukiagehama, they also operate the Hioki distillery, where whisky is distilled on stainless steel pot stills with a mash that includes unmalted barley — an approach inspired by Irish traditions.
This masterclass dives into how Hioki’s unconventional stills and mash bill create a soft yet complex style of whisky. Guided by Tatsuya Ishihara, you’ll explore Kanosuke’s philosophy, its experiments with casks, and how shochu heritage continues to shape their whiskies today.
